Low Carb, Diabetic Friendly Burrito Bowl


As promised from last weeks WIAW post – here is how I made my burrito bowl:

Low Carb, Diabetic Friendly Burrito Bowl.

First I seasoned 1 Lb. of very lean ground beef with: Salt, Pepper, 1tsp garlic powder, 1tsp cumin and 1tsp of chili powder. Then I cooked it until no longer pink.
Next I I put 1oz of Spinach in my bowl as the base & added a serving of the beef.
I topped that with:
1 oz Shredded Mexican Cheese
2 TBSP Cup Trader Joe’s Fire Roasted Corn
1/4 Cup Black Beans
1oz Red Onion
Cilantro + Scallians
Splash of Lime Juice
1oz Avocado (or 2 TBSP Guacamole)
2 TBSP Salsa (I used Trader Joe’s Salsa Verde + Salsa Authentica)
Dab of Sour Cream
My meal total was 450cals/27carbs

I hope you try this. It is so flavorful and tasty. I truly do not miss one single carb from rice, chips or anything else. My husband and I both agree its actually one of our favorite dinners!

Great Adventure and Great Recipes

Hey!

Hope you had a great weekend! I certainly did! On Saturday we went to Great Adventure – I love roller coasters! I made a joke on Instagram that I didn’t want my blood sugars to go on one with me .. lol lol.

To be truthful, they ran high all day. I have NO CLUE why. I did have 3 beers but they were spread out and I was walking a lot. Anyway when we got back home at 11:30pm I was still at 235. Something told me not to give myself more humulog. I knew I took a decent amount of it and knew it shouldn’t be that high. A few hours later it crashed big time. I woke up at 30. I was SO MAD. First I HATE eating in the middle of the night – it is such a waste of calories and I always eat more than I should. Do your blood sugars ever run high then just crash? This may be an injection thing. I feel like this doesn’t happen on the pump – not sure.

Anyway, moving along… I made these recipes from Pintrest on Sunday. They were falltastic fabulousness (do you like my made up words?). The low carb pumpkin custards where so easy to make and have a filling texture. I never make pudding or chia pudding because it’s too thin for me. I like hearty food! This custard was just that and took about 5 minutes to prep. The brussels sprout hash was actually supposed to be breakfast but Brian had to work ? so I made it for dinner. Oh and I almost forgot – my numbers were angelic on Sunday. Its like my body made up for Saturday, lower 100’s all day and I woke up at 111 this morning – yay!

So, I just went to my favorite store – Trader Joe’s and the guy that rung me up said there is a another women that goes there regularly that is a spitting image of me! He said we look so much alike, that when I walk in he  thinks she came back because she forgot something since she goes in the morning and I go in the afternoon. It is said that everybody has a twin. I want to meet this girl so bad – is it weird if I hang out at Trader Joe’s all day? Its not like I would get bored I love it there!

Easy Thai Food Dinner

Hey, hey! Glad its Friday??? I am!

Today started out OK – to be honest my blood sugar was high this morning. I went to bed at 9:30 and woke up at 10:30 shaking. I cannot think of why which is so annoying. I ate a banana and of course I had to add peanut butter because middle of the night lows = no inhibitions. So I woke up mad that I ate too much, full and high.

I got my sorry butt out of bed and did this workout. I don’t have much time in the mornings these days so I love these fast 20 minute workouts.

Next up was breakfast:

Today I had my low carb Mediterranean omelet. The only thing missing was spinach – I was totally out. My favorite part was the bagel flat with BUTTER. Usually I go with cream cheese but I had a major craving for it.

I am so excited to tell you about last nights easy Thai food dinner. It’s so awesome – I am definitely going to make it again next week.

I cooked the chicken in coconut oil. Then I tossed it with cooked green beans, curry sauce and cilantro. On the side was the scallion pancake (I can’t begin to tell you how much I love the scallion pancake). I also used the curry as a dipping sauce for the pancake. So good, so easy and so fast. This was a winner – thank you Trader Joe’s!

Meal totals:
Chicken (120) /// Beans (25cals, 6carbs) /// Curry Sauce (80cals, 7carbs) /// Scallion Pancake (160cals, 21carbs)
400cals/34carbs (I added in some extra cals to account for the coconut oil I cooked with)

Cant wait to start the weekend!! Any plans? Its still around 80 degrees here in NY so I will be on the boat!

Easy Peasy Sausage + Veggies Recipe

As promised in last weeks WIAW post, here is is my Easy Peasy Sausage + Veggies Recipe using Trader Joe’s Garlic Chicken Sausage.

STEP 1//
1 Package Trader Joe’s Garlic Chicken Sausage
1 Package Trader Joe’s Asparagus Saute
1 Package Trader Giotto’s Porcini Mushroom Truffle Triangoli
First I sliced and cooked the Sausage on a pan. Then I cooked up the veggies & boiled the raviolis.

Step 2 //
I added veggies, sausage and 2 raviolis to my dish. Brian got the rest. I topped both with garlic, a drizzle of evoo, pignolia nuts and Romano cheese.

My meal total: 485cals, 27carbs
Sausage // 220cals, 6carbs
Pasta // 85cals, 10carbs
Vegetables // 50cals, 10carbs
Pignolia nuts // 50cals, 1carb
Olive Oil // 60cals
Romano Cheese // 20cals

So easy and delicious!

Mediterranean turkey burgers

This dinner was healthy and PACKED with flavor. I made these because I have been on a Mediterranean kick lately and I do not want the ingredients I bought to go to waste. So… I threw everything together and came up with Eva’s Mediterranean turkey burgers.

First, I must introduce the meal MVP – Organic, locally raised white and purple baby eggplant. Just looking at this pic makes me happy – Eggplant is part of my veggie trifecta! I can live off Eggplant, squash and zucchini!

Slice em up baby! I then added evoo, garlic, Himalayan salt, onion powder and Mrs. Dash

Now for the turkey burgers (I used Bubba brand): Turkey Burger (190cals, 0carbs) /// organic spinach (10cals, 1carb) /// Trader Joe’s Kalamata olives (45cals 2carbs) /// red onion /// Trader Joe’s Feta cheese (35cals, 0carbs) /// Trader Joe’s organic hummus (70cals, 4carbs) I then sprinkled it with more salt, Mrs. Dash and onion powder
Meal Total (with 5oz eggplant): 450cals 18carbs

I served Brian’s on Trader Joe’s bagel flats and added roasted red pepper

Swiss Chard!

My meal last night was awesome!

Steak, Swiss Chard and Portobello mushroom fries. When I saw the Portobello fries at Trader Joe’s I had to try them!

My meal measurements:

Steak – 5oz = 200 cals, 0 carbs

Mushroom Fries – 1 Serving = 100 cals, 6 carbs

Swiss Chard – 6oz (cooked) = 36 cals, 6 carbs

Olive Oil – ½ TBSP = 60 cals, 0 carbs

The star of the show:

Just looking at the swiss chard made me happy – the vibrant colors are amazing! Thinking about my body being nourished with this made me feel fantastic! I seasoned the chard with the olive oil, Himalayan salt, ginger and fresh garlic.

My meal totaled 12 carbs so I had a few chocolate chips afterwords to satisfy my sweet tooth with added another 5 carbs.

Monday night tex mex dinner

Tonight I was in the mood for a little tex mex!

Chicken 5oz = 165cal, 1carb
Broccoli 5oz = 45cal, 7carb
Butter .5oz = 50cal, 0 carb
Tomato 123grams = 25cals, 5carb
Tex Mex Mixture 1/7 of mixture = 104cals, 15carb
TOTAL: 389cals, 28carbs

Dinner was more carbs than I wanted but I added in that tomato last minute. Its fresh from the garden and they are my absolute favorite! They are the only veggie that to me, may as well have a different name when picked fresh from the garden because it tastes NOTHING like the ones in the store.

I seasoned the chicken with low sodium taco seasoning which is why it has 1 carb.

My “Tex-Mex Mix” is a can of fire roasted tomato’s, a can of black beans, a can of sliced black olives and white onion. I put it in a pot and simmered it so the flavors blended together while I cooked the chicken. I topped it with fresh cilantro.

Brian’s was a bit more exciting…

I added fire roasted corn and green chiles to his.

I had a bunch of the tex-mex mixture left over so I saved it for Brian’s lunch the next day! ?

Saturday night dinner

Saturday night Brian and I went to Del Fuego for dinner. This is what I ordered:

Appetizer was guacamole (I ate it with veggies, Brian had the chips)

For my entree I ordered the Fuego salad. I didn’t eat all the mango to keep my carbs in check.

I also had 2 glasses of chardonnay. I “guestimated” my dinner was about 25 carbs.
I wasn’t far off because my blood sugar before bed was 111 – yay!
