Pesto and Polenta Eggs

Hey everyone!

How was your weekend? Mine was good. Mostly filled with car shopping which I hate! I unfortunately still do not have one because no one wanted to make a deal! I told Brian it must be because they are expecting to sell a lot of cars this weekend for Black Friday (Actually they should just call it Black Week at this point).

We decided to put it off until January because we are not in a rush and now know exactly what we want. The next few weeks are busy so we aren’t going to drive ourselves crazy anymore (holiday craziness is enough right now!)

Soooooo I have an awesome breakfast combo I want to share with you. I call it a combo not a recipe because you can have as much of each ingredient as your little heart desires. ?

I came up with this after I saw some kind of casserole that had polenta and eggs together last year. I then started making polenta with cheese & eggs. Then I had pesto left over from dinner and I was planning on having this breakfast the next morning so I added some to it. I tasted it and said omg this is freakin amazing!!!! Polenta is so good – I feel like it doesn’t get enough love in general. It’s so tasty and filling. Pesto is one of the best all around sauce’s in my opinion. It makes chicken, pasta, zoodles and eggs taste awesome!  You must try this tasty, healthy, diabetic friendly and low carb breakfast!

Pesto and Polenta Eggs

This is what I used:
2 servings of Polenta (I use Trader Joe’s organic Polenta) /// 120cals/28carbs
3 Egg Whites /// 75cals
1 Slice Mozzarella /// 100cals
1 TBSP Fresh Pesto (I use Trader Joe’s) /// 120cals/1carb
2 Applegate Farms Turkey Sausage /// 65cals
Total: 480cals/29carbs
PS – I eat everything mixed together, I kept everything separate because the picture looked nicer lol ?

A Fun Breakfast Recipe

So I made a fun breakfast recipe on Sunday that I want to share with you. Its healthy, easy and low carb!

It’s actually a healified replica of a breakfast I had in Hawaii.
I loved it and knew I was going to make it at home. The ingredient that makes this dish so awesome is the dinner sausage. It is a total game changer & gives a different breakfast taste dynamic.

The second ingredient that changes the dynamic is rice. In Hawaii they eat rice with everything including breakfast. I LOVED the taste of the dinner sausage and rice with the eggs. Even though I didn’t use a lot of rice (look at those mounds in the picture – good thing I was on vacation!) in this recipe – it still worked. You can also try cauliflower rice for an even lower carb option but I like to keep my breakfast over 20carbs.

1 Chicken apple sausage (I used Trader Joe’s) (120cals/7carbs)
1/2oz. Shredded Mozzerella (50cals)
1oz Avocado (45cals/4carbs)
1oz White onions (11cals/3carbs)
3 Egg Whites (75cals)
1/4 Cups White rice (50cals/10carbs)
I cooked the sausage + onions in one pan and the egg whites + cheese in another pan. Then I threw everything on the white rice.
Meal Total: 351cals/24carbs

Me and my husband both loved this. I will definitely make it again!

Low Carb Diabetic Protein Shake

Low Carb Diabetic Protein Shake

1 Scoop Vanilla protein powder (I use Tera’s) (110cals/4carbs)
1 Cup Unsweetened Vanilla Almond Milk (40cals/2carbs)
1/2 Cup Pumpkin (I use Trader Joe’s Organic Pumpkin) (50cals/10carbs)
1.5 TBSP Pumpkin Pie Syrup (I Use Torani)
1/4 tsp Cinnamon
1/4 tsp Pumpkin Pie Spice
1/8 tsp Nutmeg
1 TBSP Walnuts (8g=50cals/1carb)
1/2 Small Banana (50g=45cals/11.5carbs)
1/8 tsp Xanthan gum
Optional:
1/2 TBSP Hemp Seeds (25cals, .5carbs)
1 tsp Chia Seeds (25)
Total: 345cals/29carbs

This is a winner all around. It is SO GOOD! It tastes like a thick milkshake you would get at an ice cream store. It’s also very filling. It actually amazes me sometimes how good a diabetic friendly, low carb recipe can be. You just need to be a little more creative ? I hope you make this protein shake and enjoy it as much as I did!

Zucchini Bread Protein Shake Recipe

This shake has fall written all over it. Especially for those of you whose idea of fall doesn’t revolve around pumpkin everything. ?
I myself do love pumpkin but there are so many other fall flavors to enjoy! In this recipe I included my calorie and carb count along with the weight if I weighed the ingredient. I find weighing things to be so much better than eyeing it. I like to be exact! I hope it helps ?

Zucchini Bread Protein Shake Recipe

1 Serving of Vanilla Protein Powder (I use Tera’s) (110cals, 4carbs)
1 Cup Unsweetened Vanilla Almond Milk (40cals, 2carbs)
1/4 tsp Cinnamon
1/8 tsp Nutmeg
1/2 TBSP Hemp Seeds (28cals, .5carbs)
1 TBSP Walnuts (8g=50cals, 1carb)
1 TBSP Peanut Butter (95cals, 3carbs)
1 SMALL Frozen Banana (100g=90cals, 23carbs)
1 SMALL Zucchini (120g=20cals, 4carbs)
1-2 Ice Cubes (I only used 1)
TOTAL: 433cals, 37.5carbs

I use a NutriBullet to blend everything up

Blood on my sheets

Hey!

This morning I got SO ANNOYED – why? Because of this:

My Brand new sheets on my brand new bed had to get a blood stain. I hate blood on my sheets and it always happens! This is a T1D problem that really annoys me! Stupid needles. ? For a while I would get dark sheets and comforters (eggplant purple was my personal favorite) but I just love a beautiful off-white comforter. So I said screw it and went for it. I got this gold/beige color sheets thinking ok these aren’t too light, if blood gets on it you may not notice. Well I noticed lol. I immediately put Oxy stain stick on it and threw it in the wash. I will see later if its gone.

After my sheet debacle I did this workout:

For breakfast I made this recipe from Pintrest with some slight variations (less butter, extra bacon, no parsley) and served it with half a tortilla. Not too bad, not too bad ?

I am loving my lunch this week – I saw that organic carrot, coconut & ginger soup and HAD to buy it. Then I got a random egg salad craving and thought it would be perfect to have with the soup. I served it on a Mikey’s muffin and had some snap peas on the side. I love having something sweet with my lunch and Ghirardelli squares always hit the spot.

I am super excited to try my new tea’s from DAVIDsTEA. I got my all time favorite flavor: Quangzhou Milk Oolong and tried a new flavor: Spiced Pumpkin

Mint Matcha Protein Power Shake

Last week in my WIAW post I promised a recipe for my Mint Matcha Protein Power Shake – I added the word “Power” to it because my shakes are no joke. I use a lot of ingredients so it takes an extra minute or two to prep BUT you are getting a big dose of nutrient dense awesomeness! Who doesn’t want that? I hope you enjoy ?

Vanilla Protein Powder (I used Shakeology, If you use low crab protein powder can add half a banana for some carbs) (130cals, 14carbs)
Almond Milk // 1 Cup // (50cals, 1carb)
Heavy Cream //1 TBSP // (50cals,0carbs)
Matcha Powder // 2tsp // (20cals, 4carbs)
Cacao Nibs // 6g // (40cals, 2carbs)
Walnuts // 8g // (50cals, 1carb)
Hemp Seed //1TBSP // (50cals, 1carb)
Handful of Mint, Handful of Spinach (10cals, 1carb)
Bee pollen // 1/2tsp // (10cal, 1carb)
Ice
Meal Total: 410cals, 25carbs

I love fresh mint, its amazing how much flavor it adds.

Having Monday off and letting loose over Labor day weekend made me feel a little weird when I woke up so I was eager to get right back on track. This was the prefect breakfast to do that and I felt great immediately after I drank it ?

Now I am ready to face the week! Have an awesomely fantastic Tuesday!

Fig Cake Batter Protein Shake

Happy Friday!!

I am SOOOOO happy it is Friday! I fully intend to enjoy every moment of this weekend because it turns out next week is going to be another busy one.

This morning started with a 150 blood sugar- better than yesterday but so not where I want to be. Then I did this workout again. I love it – its short, works everything and you get sweaty!

Next I made the best protein shake ever lol. Seriously this is one of my fav’s – and I make a lot of protein shakes. It was sweet, creamy, cake batter awesomeness.

What made it so special? I used Figs to sweeten it instead of the same old banana. I was lucky enough to have some figs left over from a frozen bag I bought from Trader Joe’s a while back. Unfortunately they discontinued them though. However, since it is the season for figs just buy them, wait till they are soft and rip then freeze them. They make your shake so sweet and delicious. It will taste like cake batter. I asked Brian to taste to make sure it wasn’t just me and he agreed – it tastes like cake batter – so yummy! Here is the recipe I used:

Fig Cake Batter Protein Shake

1 Cup Almond or Coconut Milk
1 Scoop Protein Powder (I use Tera’s)
1 TBSP Heavy Cream
2 TBSP Cookie dough Torani syrup (or sweetener of choice, I had this on hand and it gives it more of a desert, cake taste)
1 TBSP Walnuts
1/2 TBSP Chia Seeds
2 Large Figs

My total was: 360cals/29carbs

I also had a huge spoonful of Peanut Butter with it ?

Bai5 and KeVita (My 2 Favorite Drinks)

Hello!

Happy Hump Day everybody! One day closer to the weekend yay! The past 2 weeks have been super busy for me. I have had four doctors appointments, plans with family/friends, a tutoring appointment and a nail appointment. My nail appointment was last night – like the color? I love it! It’s this awesome cherry red color. Not very fall-ish but hey I am still holding onto summer for as long as possible!

Except for my falltastic Zucchini Bread Protein Shake recipe. If you follow me on Instagram the ingredients are on there. I may however do a detailed recipe on here next week so look out ?

OK I have to be honest this post was supposed to go out yesterday and my WIAW post was supposed to go out today but last night I had a quest bar and sliced turkey with cheddar for dinner. Then I ate Wasa crackers as my snack so I am going to do my WIAW post tomorrow when the food lineup is a bit more interesting!

OK so now onto the subject of the post ? my 2 FAVORITE drinks! They both have very little carbs. I have been drinking them for years now. Bai5 and KeVita! Recently Bai has become much more popular but I used to only be able to get them at the health food store. Now they are everywhere including 7-11 and Stop & Shop – yay! KeVita is only available in the health food stores, Wild by Nature and Wholefoods. However, it is certainly worth the trip!

Bai5 is probably the best all around drink. When I was little I used to dream of flavors like this. But the only “fun” drinks were loaded with sugar. As I got older Snapple started making some fun flavors but nothing like this! Plus Bai is naturally sweetened and antioxidant infused – healthy healthy! BTW they also makes Bai Bubbles and Bai Antiwater – I don’t love Bai Bubbles and I haven’t had the water. My Favorite Bai5 flavors are: Molokai Coconut, Congo Pear, Sumatra Dragonfruit, Ipanema Pomegranate, Malawi Mango and Brasilia Blueberry.

Next is KeVita. They actually just changed their packaging so if you see it and it looks different – thats why. I love KeVita because it is light, refreshing and lightly carbonated. The flavor is not overpowering at all and does not taste fake.KeVita is a probiotic drink. It is certified organic and naturally sweetened. Can you ask for more out of a drink??? My favorite flavors are: Coconut, Strawberry Acai Coconut, Mojita, Pinapple Coconut and Mango Coconut. See a trend? I am a coconut freak!

A Great Test Meter

Hey everyone!

Have a good weekend? I did ? On Saturday Brian and I set up our new bed, ran some errands then stayed in because it was a rainy night – perfect for a movie!

After much research, we decided on a Leesa Mattress. It was between that + Casper but when I read the reviews – Leesa sounded like a better fit. It comes in a small box and expands when you open it – it’s insane! Have you heard about these new online companies that make inexpensive mattresses that are supposed to be better than the expensive ones at the store? You can’t try them before you buy them but they have great reviews and you get to sleep on it for 100 nights before making your decision.

Our new bed setup includes: Leesa king sized mattress, box spring, Charter Club sheets from Macy’s, Phoenix Down pillows + comforter, Pacific Coast feather bed and a duvet cover from Pottery Barn. Everything is soooo comfy! We get our headboard and frame this weekend – I cant wait!

I got my Birch Box shipment. This is such a good diabetic present. You get a “treat” every month to indulge in that doesn’t raise your blood sugar! P.S. They make them for men too ?

Sunday started with a great breakfast: 3 Egg whites, 2 Applegate farms organic turkey sausage links and a bunch of avocado on a Mikey’s Muffin.

After that we went to the Cheescake factory for my Dad and little brothers birthdays. I got the Skinnylicious chopped salad. I was SO disappointed – I didn’t even take  a picture because it was just a bowl of lettuce. I got it once before and it was awesome – so much “stuff” in it – so satisfying… what happened Cheescake factory?

Finally if you are looking for a test meter I will save you the research. Buy this one:

It is a great test meter. It takes a tiny blood sample and shows the result in 5 seconds. It does not feel cheap at all and the best part? 100 Strips are only $35. Everything is at Wallmart or on Wallmart.com. I have had so many issues with getting test strips in the past. I test 8 times a day (I do not use a pump) and apparently this is not the norm. I was even told by a doctor that I should not need to test more than 4 times a day. He wouldn’t write me a script for more than that! Can you believe that? I still can’t. Anyway, I get a shipment of one touch test strips every 3 months and sometimes I run out before the next shipment. Thankfully it is convenient and affordable for me to get these strips because One Touch strips are SO EXPENSIVE!

A Boat-Tastic Weekend!

I have to say I LOVED this past weekend!!

On Friday night we met up with our good friends for dinner. I had grey goose and seltzer as my cocktail. (or grey goose and vodka as I said on accident lol). For my appetizer I had steamed mussels and my entree was a bun free turkey burger with avocado, swiss and mushrooms. I am so mad I forgot to take pictures but I get this combo a lot so you will see a picture soon!

Saturday morning I got to work on a new pancake recipe. I went with a coconut flour recipe after last weeks wheat-free almond flour pancake bust

As usual I weighed, measured and recorded everything ?

My plate looked like this: 2 whites, cheese, 1/3 Serving of coconut flour pancakes, 1TBSP Peanut Butter

These were goooooooood! Much better than last weeks recipe. I don’t know if they are my clear winner for pancakes but not too bad. They were a tiny bit dry – I am actually tossing around the idea of modifying them by taking out the honey and adding more coconut milk to make a sandwich wraps. We will see but I def say try these.

After this we hot the water! What an amazingly beautiful perfect day!

Later on we took our boat to a friends house

Sunday was the same day on repeat plus some added fuzz…
